Cooking with Pinterest... as a Guideline

In an effort to save money and be more productive *ha*, I was looking for a breakfast alternative to visiting work's cafe in the morning. I found lots of egg muffin posts on pinterest and particularly found this one: http://www.life-as-a-lofthouse.blogspot.com/2013/01/egg-muffins.html?m=1

I started with this recipe, and you can see what happened..

Egg Muffins

8 large eggs 
2 Tablespoons milk (I forgot this one)
1 cup diced Ham (eww- I don't like ham)
1/4 cup chopped fresh chives (Hmm don't have this..)
(One GREEN pepper) 1/4 cup Red bell pepper, chopped
(An unmeasured amount) 1/2 cup shredded cheddar cheese (optional)

One Onion, chopped

To summarize, my recipe is: 


Egg Muffins

8 large eggs 
One  Green pepper, chopped
Some shredded cheddar cheese 

One Onion, chopped

DIRECTIONS: 
1. Preheat oven to 350 degrees F. Spray a muffin tin with non-stick spray.
2. Saute onions and peppers in a skillet until limp. 
3. In a medium bowl, whisk eggs. Stir in onions, pepper and a sprinkle of cheese. Divide into the 12 muffin cups, cover tops with shredded cheese. 

4. Bake for 20 minutes or until egg is set. 
5. Let cool until you forget and re-remember you made these. Loosen with a knife. Store in the fridge and eat through out the week. To heat up: bake in a toaster oven at 350 for 10 minutes, flip and cook another 5 minutes. I enjoy 2 for a morning breakfast. 

Purpose

On a surprisingly reflective day, I thought it would be interesting to journal through writing and photos the various challenges and activities I have both decided to take on and experience. If you asked me what I did in 2012, I would have told you that I got married. However that was one day (and a honeymoon week!) of 365 days. Comparing January 1, 2012 to December 31, 2012- lots more things happened. 

For example, in January we painted our guest room- and by December 31 it still looked like a storage closet. I made lots of decorating decisions and should have taken before and after photos. We had 5 dogs foster with us in 2012, and Smiley stayed for all of 3 months! I made my first garden at this house, and hopefully have a compost well on its way. 

At the end of 2013 (with the exception of the first 51 days), I'll have a better reflection of my year.
